Add TARGET_INCLUDE_DIRECTORIES for assimp target 

With `TARGET_INCLUDE_DIRECTORIES` the `assimp` target can directly used in another CMake project, e.g. assimp can be used in a submodule with an `add_subdirectory()` call.
